I made these cupcakes just in time for the 1-year anniversary of getting back into cake decoration, because my teal ombre cake was made on 2/16/13.
This recipe is based on my favorite vanilla cupcakes, but with coffee frosting.
To make the coffee frosting, I just make Glorious Treats’ vanilla cream cheese frosting but, in addition to my usual vanilla paste, I also added a teaspoon of coffee extract and about a tablespoon of very strongly-brewed coffee (made from instant coffee and hot water). I added extra powdered sugar to compensate for the additional liquid until it reached the right consistency (i.e. so it wasn’t too wet or melty).
At some point, I’ll make a full cupcake tutorial that goes over ensuring your frosting is crusting properly, as well as my proportions for the frosting (it often varies between batches). In the meantime, happy baking!
